N°1 If your name is Quincy
N°2 If your name is Titchmarsh

Neither if you are an aspiring butcher/chef.
Slice meat down to the bone then use a cleaver.

Homemade Thai Green curry. Well, I used a paste, and coconut milk, but the rest was...chopped and assembled.

well I normal cut to the bone then saw as on legs of lamb depend the cut it can be quite awkward to chop as it not a clean bone some times so if at joints can bouncy off and also ant got the space for a butcher block .. it's just sometime you know places like morrissons / asda / etc do the big leg of lamb but it's to much to cook in one go so like to half it and found sawing it a simpler way and less mess and chop off fingers think am going for a Quincy use to love that show but not so much of late my age I guess
