Any bike.......The choices are endless then

I would recommend, a medium-to-large capacity upright, naked bike. Very comfortable, very easy to handle, good for commuting and you can add a windscreen later on if you plan on doing more miles. A second hand one obviously is best to start on to see if you like it (and in case you drop it). Go have a look at the CB1300, XJR1300, ZRX1200, GSX1400, (W800 or CB1100 if you like that style), maybe some Triumphs which I don't know much about....I know these engines all seem large, but (except the retros which are pretty slow) they're all incredibly lazy at regular speeds and only really take off when you demand it. They also hold their value well and are incredibly cheap.

depends how you like to ride the bike to which you get same as push bikes you got the racer types and then the mountain bike type I use to like to sit upright on a bike .. never one for leaning on the gas tank me really found my centre of balance was off in that position

I used a bsa at times and a mate had a 1973 yamaha 125cc 2 stroke that I use to borrow when he got a new bike

And unless you're a giant, the half an inch you lose in headroom hardly ever matters. And I've had cars in the household as old as 1983, not one sunroof ever leaked.
Anything can be a track car.

Personally I still hate the things. I mean I have two cars with them so it wouldn't stop me from buying a car but I'd buy one without it if I have a choice. My head is basically jammed up against the roof in my black car thanks to the sunroof.

As someone who is only 5'8", headroom can still be an issue at times in modern cars, but it's usually more of an ingress/egress thing.
