    I'm in Calgary for a few days visiting family and on request I made pancake omlettes for breakfast this morning. Have not made them in years. Not sure if I invented them or not, they are interesting and would probably be popular in some all day breakfast joint full of people with hangovers.

    I pour a plate-sized pancake into the pan and before it cooks sprinkle it with sauted veggies. Once cooked I plate it and cover it with maple syrup, bacon, and shredded aged cheddar. Cover that with a seasoned egg scramble the same size.

    I don't make them often because I actually don't like sweet in my savoury. Maple syrup and cheese, pancakes and fried mushroom, onions, and papers? All on the fork at once? Not my thing. I made it for Ms. Straps many years ago when she wanted a big breakfast but couldn't decide what she wanted. So I made her everything to teach her a lesson, and instead she fell for the dish and goads me into making it when she remembers it.

    As I mentioned, it belongs in a hangover cure recipe book at best.
    It is now my duty to completely drain you.

    Meh - I only used the oil once and I don't know how much it penetrates the chicken flesh. The batter was egg and flour. The chips we cook in the oven. And look at all that salad! I need the calories anyway - I'm losing weight which is no good. Potatoes unknown - from a local veg box.
