    Tomorrow's beef checks cleaned and soaking in red wine.

    Will be cooked in the wine tomorrow with some spices and a few marrow bones and then served with polenta.

    I deboned 2 turkeys today and they are currently in brine. It's not very picturesque at the moment, but deliciousness will be through the roof.

    I also made 10 cups of broth from the carcasses, but froze it all. It'll come in handy soon. Soup weather is a' comin.
    It is now my duty to completely drain you.

    End result of the beef cheeks

    6 hours cooking in the wine, sauce then reduced and thickened.

    Ended up incredibly tender.. Very underutilized cut..

    Again, I haven't been on in awhile and the first place I go on a watch forum, is to the food thread.
    A man must have priorities.

    It's finally cooling off here in middle Tennessee, so I made a batch of chilli today. A kind of mix of Texas red and plain eastern style. What can I say, I like tomatoes.
    Chunks of beef and six types of peppers. Pequins, arbol, habenero, cascabel, chilpotle, and mulato entero so it will have a good depth of pepper flavor and not just heat.
    That's a 5 quart pot.
