I am very fond of ginger, and the hotter the better. Last year a Vietnamese friend gave me a sample of something her sister had brought back from Saigon on a family visit. It was dried sweetened ginger, very thin and crunchy like potato chips (crisps). I searched the internet and found nothing like it anywhere, except for the shop in Saigon that made the originals to sell to neighbors. I emailed them and asked if they shipped overseas. Very politely declined, expressing worries about cost and other difficulties. So I started making it myself.
About 4 pounds of large ginger roots, shaved very thin on a mandoline, then simmered with sugar and a few cups of water for an hour or two, then placed on racks to go into the dehydrator for about 24 hours. The results is ... intense!
