    Gnoccchi boiled then pan-fried with arugula, indoor mustard greens and outdoor arugula sprouts, crisped serrano ham. Cheese about to be added.

    That gnocchi has a beautiful golden colour: might there be a touch of saffron or similar in the mix?

    No, that is just from pan frying. I didn't want brown, but I did want to change the exterior texture. Butter and olive oil and a pretty low temp.
