    After 14 years with no maintenance beyond occasionally emptying the ash from the firebox the auger motor started acting up on my favourite smoker. A new auger motor and an upgraded digital control just because and we have wood roasted farm chicken and corn.. I ate this with a New York style pickled potato salad.

    I forgot to take a picture of this last night, b/c they practically disappeared, but we fried up some cod for fish tacos. The reason I mention is because we used a rice flour and water slurry to batter them, and then just popped them in a thin layer of oil, turning once. I normally avoid frying b/c of the mess, excess oil, etc, but these were (a) super quick and clean, (b) little-to-no residual oil to worry about, and (c) the crispiest bite I have ever encountered outside of a double fryer.

    9/10; would crunch again.

    When low carbing, I use a mix of hazelnut flour and salt and pepper on catfish filets. Tends to work rather well. Oddly, I am not for fixing lightly fried food unless it is tempura. If you are going to use oil, you should use it all the way. Of course, we all like our food our way.
