    Making HOW much ketchup? Well, I started with 5 pounds of apples, 11 pounds of tomatoes and 3 pounds of onions. This batch has no added sugar. The needed sweetness comes from unfiltered , unsweetened apple juice.

    That is the 8.4 litre le Creuset Dutch oven. When fully reduced it'll be about 5 litres.

    Risotto Milanese is as much a form of meditation for me as it is a delicious meal.Much more than bread making.It is a ritual. I have a glass of the same wine as I am cooking with, which is always an off dry to dry Orvieto. I play Jah Wobble's first Invader's Of The Heart album and I stand directly over the risotto while cooking it. The combination of saffron, chicken stock, wine and onions makes one a tiny bit high.
