Continuing kc's Canadian theme:
Seared bison striploin with a juniper berry rub. The fat used was ghee.
Flamed off in rye heavy Canadian whiskey. The corn in it gives a hint of sweetness, similar to flaming beef in brandy, while the woodiness of the rye plays up the flavour of an animal that eats woody greens.
Pan fried everything. Salt and vinegar potatoes and sauteed beans. The skin on baby potatoes are parboiled in vinegar water, then pan fried and salted. A decent Chilean Cab Sauv followed by a Canadian pipe wine (port) with some locally made truffles.
