    Looks decent. Most of "plating" is just people stacking pieces food on top of each other. That's what I do.

    I've oft thought about learning plating and then just said naw. A good looking meal will look good, but a tasty meal is always tasty. Best example I've seen is a low country craw fish boil. Cooked in a large kettle and then after straining, unceremoniously dropped onto picnic tables covered with plastic wrap. Add a large cold beer and you have near heaven! But it looks like a mess!

    Us canucks have a great version of that as well, which I experience many times on PEI over the course of my visits there. Table covered in whole lobsters and a big bowl of the world's best potatoes. Looks a mess and is a mess, and it also cannot be beaten.

    I have mastered sushi preparation - filling rolling and cutting. I don't even use the mat - it hinders me. I'm pleased.

    We did sushi on Sunday and I agree. The mat is a valuable tool when you're getting started. Now I'll only use saran, and only then when I roll them inside out.
