    I know the fans of Texas red will call me blasphemous, but frankly I don't care. I eat my chilli, with beans and peppers and other good things. This one started with cold smoked beef braised in brown ale. Fire roasted tomatoes and corn from last summer joined in and all were dusted with smoked habaneros, jalapenos and poblanos as well as my house chilli seasoning blend.

    Mrs. Skywatch had a late notice request for something related to Chinese New Year, so I threw together a few quick courses that turned out better than expected. Hua Jiao (Szechuan pepper corn) shrimp with sesame bean threads, black bean chicken, daikon & peanut salad, pot stickers and spicy rice. There was also a tiny snack of smoked duck breast with Mae Ploy sauce. Not bad for a 30 minute improvisation with leftovers.

    Not my finest photography but certainly some damn fine flavours! Fried falafel, Haloumi, roast peppers, onions, chilli coriander guacamole, lemon, garlic, sriracha... I think that was it.
