    So instead of jumping back in with boring ol' beef (although I have been working on thin, diner style burgers in a cast iron pan) I decided to start with my newest dish, which just so happens to be wife's favorite dessert... creme brulee.

    Of course you've got to start with the vanilla bean (keen observers and long time followers of this thread might notice the knife that was a gift from lbj187).



    Didn't get pics of the process (dang kids), but here they are right after they went into the oven.



    And setting up in the fridge (sorry for subjecting you to pictures of my cluttered fridge).



    A little over two hours later they are sugared and read for the best part.



    The best part!



    Of course the finished product.




    I got the thumbs up from my wife, and that's really all the praise I could need. But I did take away several things; next time I need to use more sugar on the top. The consistency of these was a little off, I don't know if it was because they needed to set up more in the fridge or cook a little longer (I was not going to overcook them), I'll know tomorrow night when we eat some more.

    Chris,looks good. I have found I have to cook them longer at my altitude. I am interested in your day two opinions of yours.

    Diner burgers, huh?

    I just hickory smoked and ground ten pounds of beef for thick burgers. Man I love cold smoked beef!

    Damn, Photobucket has the worst website. The iPad app is unusable garbage. The iPhone app is better. I've been trying to load the website for the last three minutes so I can post a picture of the chicken udon soup I had for dinner tonight. My brother, of all people, cooked it!

    Welcome back, Chris! I asked of your whereabouts earlier in this thread actually when I used your care package hot sauce and rub, I think? I made fried chicken with it again two days ago - thanks! Where ya been?

    Creme brulee looks great - a favourite desert of mine. I need a blowtorch.

    My wife (and to a lesser extent me as well) does not like a thick burger so she requested that I start cooking them diner style. Still working on getting them perfect, but it's a fun process. I actually did some this weekend at a friends camp on the river. The heating sources were limited so we just used a crawfish burner set-up. Tried it out on some onions first to go on the burger just to get the fire right, then we did some patties.

    Glad you're still enjoying the stuff, let me know if you need more. I'm sure we could work something out.

    As to where I've been, no where in particular really, just busy. After missing for a while you start feeling behind and it seems harder and harder to get back in. I missed the place so I finally just decided to jump back in.

    Yeah, it's a food delivery service. Once a week, they send you the raw ingredients, perfectly measured, for three meals for two people (each time you cook, it's two servings), all locally sourced, and you cook it following their recipes. The cod and quinoa I cooked the other day was a Blue Apron recipe.

    It's really nice. There are never any leftovers, so you don't get sick of the food (but you keep the recipe cards, so you can always make it again if you wanted to), it allows you to try new things (I love quinoa, my brother hates it, and therefore I've never cooked it), and makes you look like a pro. Also, there's no wastage, since they only send you enough for each meal (except cilantro, they seem to send s lot more cilantro than is strictly necessary. And every meal is 700 calories or less.

    I made burgers from scratch the other day, and I too have shaping problems. I'm told to dimple them so they even out, but even them, they still round out a little.
