    I run the pasta dough through my hand pasta machine on the widest setting, fold it in half and repeat about 8 times on that setting before closing down the rollers 1 notch at a time so the dough has been through the machine about 16 times before I cut it into ribbons or cut out shapes from the sheet. Comes out pretty smooth even without having 00 flour.

    The cookbook calls this Southwestern Salad - I don't think they mean Cornwall !

    Lettuce , cucumber, black beans, pinto beans, corn, broccoli, tomatoes , tortilla strips and a coriander jalapeño lime tahini cannelli bean dressing .

    Marinated and cooked some chicken thighs last night. Tasty, but chicken thighs always are. Best part of the bird to cook in the oven. Easy, cheap, healthy, and always pretty juicy. Hard to screw up.
