    Glad to see that Philly has changed for the better since I left it in 96. The place I really miss is Victory Brew Pub (Downingtown). Mighty fine beer and pizza last time I was there!

    2 pounds of chuck cross rib, 8 pounds of sirloin, two hours of cold hickory smoke and then a close encounter with the grinder.

    Victory makes some of my favorite brews.

    But yeah, Philly would be unrecognizable if you haven't been here since 96.

    Yesterday's NYE meal:

    Starter was lobster ravioli with a lobster sauce ( not pictured is lobster tail we forgot to add until halfway into the dish)

    Not the prettiest of ravioli. Guess it's safe to say I have no Italian roots.

    Main was the saddle of rabbit, stuffed with chicken mousse, wrapped in prosciutto, pommes duchess, rabbit sauce and fritters of confit rabbit leg with some edamame and hazelnuts.

    Fritters turned out great. Lovely crunch and meat inside hadn't gone dry


    Pudding was passion fruit Pannacotta with pineapple and champagne sorbet, pineapple salsa and coconut tuile.


    Suffice to say there is quite a lot of washing up to do today.... But well worth it.

    I need a smoker. The beef was excellent but tasted kinda like my pulled pork. I want to try it like this Name:  uploadfromtaptalk1451647553264.jpg

    That's how I imagine brisket as well. Thinking about getting a gas smoker. Seems the easiest to handle and can switch the gas bottles I already have between grill and smoker.

    Cheers Geoff. It was good, but was cooking for two days so it better be...

    Found out though that a pasta machine really is needed. A rolling pin is too much trouble.
