    We're finally getting our usual autumn rains after 4 years of drought. The mushrooms are happy. Found these yesterday - Lepiota rachodes and Clitocybe nuda - and cooked them down into a nice duxelles. After 90 minutes of slow cooking, all of this, some butter and a large onion fit easily into 300ml.
