In Canada Remembrance Day is generally followed by "Lest we forget". Lest we forget the horror and sacrifice of war. My parents both had German occupiers living in their houses. Both told stories of the goodness of Germans and the badness of Nazis. My Father told a story of a Dutch hog being killed by a German soldier. The commanding officer threatened to send all the German's on the street to the Eastern Front if the culprit was not turned over for punishment.
My wife's Father was first generation Canadian of Norwegian descent and her Mother was first generation Canadian of Ukrainian descent. Both grew up not speaking English and both were huge Anglophile's. My wife's Father came back from two and a half tours in Wellingtons and then Lancasters with a DFC and horror stories that he would only hint at in the darkest times. He left Canada in 1941 a barber and a prospector and came back incapable of cutting hair until the 1970s. One of the things we do each Remembrance Day is to eat an "English meal" ( We eat Dutch food regularly).
Standing rib roast, Yorkshire puds, mash, gravy and roast veg with a decent Bourdeaux (a nod to the French).

Day off, means... baking bread.Today's effort is old dough, atta biga and organic unbleached flour with no additional yeast. That and the extra salt meant rising took about six hours. The result is a beautiful crust and something that should be chewy yet light.

I had rabbit yesterday for lunch. It was excellent. No pics, I was with a client. Buy I need to try it less tarted up to taste it.

no rabbit today. Just some dorado with rice, lime, cilantro, homemade tartar sauce, and homemade salsa. Caught by me, of course.

Meyer lemons are in the stores here right now. Like chantarelle season that makes it a special time at Chez Hank.
Even without making sourdough baguette for the croutons this is by far the most complex "caesar" salad I have ever made. There are no fewer than three sauces: a homemade meyer lemon mayonnaise, a paste of three bulbs of garlic and a tablespoon of milk and finally the meyer lemon anchovy sauce which is simmered for hours until the anchovies literally melt. The chicken is marinated in meyer lemons and buttermilk and the romaine lettuce is broiled.
Washed down with a cheapish Alsatian Reisling, this was a SUPERIOR meal!

Not food, but in the Pharm aisle at the market today, this was to be seen. I'm guessing saucy stockboy, but it is a huge win regardless.
