    Nice! The porchetta is for the true pig lover. You have pork loin (not tenderloin) wrapped in pork belly. Naturally, a lot of spices are involved. The actual killer is not the time it takes to make it because it is not all that long. It is because you have to let it dry/age in the fridge for two days for the best results!
