A little left over pork tenderloin led to intentionally cooking too much rice on gumbo night which resulted in tonight's meal- a nasi goreng variation.
With extra ketjap manis and sambal olek on the far side.
Nice! The porchetta is for the true pig lover. You have pork loin (not tenderloin) wrapped in pork belly. Naturally, a lot of spices are involved. The actual killer is not the time it takes to make it because it is not all that long. It is because you have to let it dry/age in the fridge for two days for the best results!

Lamb is by far my favourite, but not very versatile
