    Ok, so I've been absent for a while, I'll try to make up for it with this post.

    My son's 4th birthday was last week so we did a party for him the Saturday before. We had invited a lot of friends with kids and just adult friends in general and I had planned on smoking a brisket. Well, once I got adding up all the people we invited it seemed like one whole packers would more than likely not feed everyone. That put me in a bit of dilemma as I had already promised brisket and only had my large green egg to use. While contemplating what I needed to do to get two briskets smoke in time for the party I remember reading up on the adjustable rig from the Ceramic Grill Store. I had never ordered one, even though I had always wanted to try it out, so this situation pushed me over the edge. I'll leave most of the rest of the story to the pictures...

    Here is the set-up I decided on for the two briskets...








    Briskets are rubbed down, time to get them going.




    When it came time to cook, I had to get a little creative with the placement to make them both fit... (I need an XL Egg now).










    The top one was done first so I was able to pull it and remove the top rack for easy access to the bottom.




    For anyone with an BGE I’d suggest looking into the options at The Ceramic Grill Store for their rigs and other add-ons, my above set-up isn’t all I got. In fact I could do up to 4 layers direct and possibly indirect if I get a little creative.

    Tough act to follow those epic looking briskets. But that pie looks really good.

    Brussells Sprouts underneath? They look nice and crunchy. I love to sauté them shredded with some bits of bacon-ends and onion, salt pepper and caraway seeds, deglazed with a bit of dry vermouth. Yummy that way!
    Too many watches, not enough wrists.

    Top brisket







    Bottom brisket. As you can see the bark isn’t as thick or firm as the rendering fat from the top one was dripping onto the bottom one. There are the only two pics I got of it.

    Yes, they are sprouts. Saute' in some olive oil, garlic, onions,worcester sauce and white wine. I too will put some bacon or Canadian ham bits mixed in with a few sunflower seeds.

    Tough (At least for me), to cook and make these appetizing.

    They can be really overpowering if you don't tone them down a bit. .

    Looks great Chris. I am working on something today that will be tomorrow's meal. I think you will approve of it. It involves a lot flour and a lot of oil
