    Roasted a chicken on Sunday. On Monday I left the carcass swimming in a big pot in the oven at 180 F all day with some aromatics. When I got home I drained the stock threw in more chiles, ginger, garlic, lime leaves and lemongrass. Coconut milk, a ton of vegetables, the left over roast chicken, red curry and rice noodles.

    My wife requested homemade pizza tonight, and since she's enjoying the US Baseball "World Series" (ironic quotes because MLB baseball includes about 10 nationalities - Canada, USA, Mexico, Japan, Cuba, Costa Rica, Brazil, Venzuela, Puerto Rico, Domican... did I leave anything out?) I figured I would humor her (I enjoy cooking pizza from scratch and it's one of my guilty pleasures). Tonight was my sourdough herb crust with homegrown tomato sauce, grilled chicken, capers, green olives, and fresh homegrown basil & oregano and a mix of Manchego, Romano and Mexican Queso blend cheeses (and yes I know "queso" means cheese in Spanish.) I feel fat and slightly tipsy on a good Barbera d'Asti about now.

    And now I'm hungry and it's not even 10 AM yet...

    Also impressed with the shape of the pizza. Never manage to get mine that round, so always end up doing rectangles instead.

    I have a pizza tray that is perfectly round. If my pizza isn't then a quick stretch or nip tuck with the wheel around the rim then it is!

    The starting point is usually very far from round so with the amount of dough needed to cut off it would leave a very small pie. Rectangle also means bigger area to fill with toppings... Maximizing the surface area and still fitting in the oven
