    Started the pear tarts.
    Pears, ginger, sugar, butter. Roast for 1 hour.
    Cranberries, whole and almond extract to be mixed in the above, when cooled.
    Then put into the dough , and bake for 1 hour.

    One of the tarts, ready for the oven. I have to bake them one at a time, the monster chicken is taking up most of the oven.

    Our current stove has two ovens. The top is a very large full size convection that gets super hot and the lower one is the size of the old storage drawers. It only goes to 450 but it is great for rolls and tarts and casseroles.

    I made a simple Bolognese, boosted the garlic and Parmesan, and added a bit of heavy cream and shredded carrot to balance the acidity.

    Interested in that mustard sauce... I have too much mustard in my fridge, but I love it's variety and can't stop buying it...

    Us too! About half the fridge door is mustard. Jamaican mustard hot sauces are delicious. They go great with chicken in my opinion.
