smoked another pound of jalapenos. The last batch of chipotle was made using hickory smoke but this time I used mesquite. Head to head challenge will ensue.

I smoked a handful of poblanos last month with some of that pimento wood for a salsa. It was pretty hardcore.

Smoky back bacon, basil oil and pasta, all homemade, the last of my garden mustard greens, home grown chiles and garlic. The only thing from elsewhere is the parmesan.

It's how the Greek eat - basically tapas. Beef koftas, fried cheese (not halloumi this time - another kind), homemade spicy slaw, flatbreads etc.

After sixteen hours on the slow setting of the slow cooker: pinto beans, little red peppers, fresh coriander and the usual vegetable in tomato with lots of toasted spices and most importantly, smoked paprika. I then gave it an hour without the lid to thicken it up and help caramelise the top a bit more.



And then served it on fluffy rice
