    Found a neglected potato in my fridge. Could have baked it but remembered I've goose fat in the fridge too. So, cut into fifteen pieces and roasted, with very spicy* lentil ragout



    *puy lentils, red pepper, coriander, shallots, red onion, celery, leek, ginger, garlic, tomato, soy sauce, spices (cumin, coriander, caraway, fennel, cinnamon, pepper (all toasted before grinding), flaked chillie, ginger, paprika, smoked paprika)

    I think it was the first time I had roasted potatoes this century. Blimey goose fat makes a difference, huh?!?!

    My tin was nonstick, which I'm wondering accounts for they're being leathery rather than crispy? (Didn't bother me but, you know, nice to know what you're doing ) Or was because I turned them too frequently?

    I have roast or chips at least twice a week. There are lots of variables in the making of a good roastie - potatoes variety, size, part boil length, if you shake em up, oil, oven heat... I've had great and bad ones using all variants so... According to the Internet maris piper and desiree are consistently the best varieties though. Mashing then down a bit half way through cooking pops the insides out which then crisp up too, which is fun.
