Hangar steak and potatoes two ways. The sauce is a play off of a classic Veloute. Shallots make the world go round.

Also the bed of brown butter Brussel sprouts is the greatest food ever. Anytime some tells me they don't like brussel sprouts, I insist they try mine. Rarely do they not convert.

Left-over grilled ribeye
Goat cheese
Alaea Hawaiian pink sea salt
Drizzled with olive oil and balsamic



It actually turned out pretty good, if not a little too juicy...
