    I think an important bit is being intensely relaxed about not trying to get every bit of egg back out of the pan. You lose far less than you fear, and you gain so much in quality.

    Also: err on the side of cooking it a bit longer than intended: I've never managed to make the yolks solid, and always wait a good couple of moments after I've first thought about taking them out.

    Final bonus hint: in your hurry to serve up, don't leave the pan to boil dry on the stove

    Lasagna again....

    This week on FaceBook I spotted a coupon for 1/2 off Lasagna from a restaurant chain. I happen to love their Lasagna, hadn't had it in some time, so...

    They only serve "Family Style" (other than lunch portions) which means you can order a "small" (serve's 2) or "large" (served "4 or more"). Figured at half off, I'd go for the large and get 4 meals out if it (finished tonight, was also dinner last night and breakfast on Fri ). Good stuff, this "loaf of Lasagna": is HUGE! The pic really doesn't illustrate the size well, for reference the top is 5 or 6 inches above the plate!
