    Yes, I sauced the chops before tasting, but the sentence prior to the one you quote I bemoaned that choice.

    I also think part of the problem is the sauce didn't turn out as good as it normally does. It was a little spicy. I don't normally measure spices if they are under a tsp so when I went to sprinkle a little cayenne a large clump fell out into the sauce. I also need to dial back the black pepper a little.
