    I only bother having steak if I know its really good, in which case I don't want sauce getting in the way.

    I don't usually, not with beef. Sometimes. On bison, it might actually be a great idea. Less flavor. I thought about making a sauce, but didn't have any ingredients.

    But seriously, a well cooked steak needs no sauce. I still sometimes like to add a sauce just to mix it up, usually when I'm at a restaurant because I find I prefer the steaks I grill at home to any restaurant steak I've had (except that long bone wagyu ribeye I had at Del Frescos). I usually go for a wine reduction sauce.
    I do, at times, like a sauce on a filet mignon, since they don't have as much flavor off the bone.

    I refuse to buy a steak from a restaurant because I make them better and cheaper. My restaurant buys are things I don't do well, or at all. As for sauce, depends on my mood or if I have company. I cook steaks perfect and let them decide to smother it with steak killer or not.

    Well, we're not exactly talking about A-1 here. Sullivan's has a Gorgonzola butter sauce that only adds to the steak, that's for sure.



    But let's not forget that I cooked a bison steak. Very healthy, but nowhere near as flavorful as a beef steak.
