    I think she enjoyed it more than I did.

    Ive got a friend that gives me a dozen organic eggs for $2.

    Just waiting for the potatoes to finish boiling, then time for Swedish Midsummers lunch.

    Pickled herring in different ways (with mustard and dill, with red onions, carrots and peppercorns ) Soused herring, smoked salmon, salmon pate, sour cream, chives.

    It was. Pretty much what is eaten at every Swedish holiday. Add some meat for Christmas and eggs for easter.

    Pickled herring is somewhat of an acquired taste but there are so many variations. Goes great with beer and aquavit.
