    Well, I can say that after having made various forms of cold smoked seafood, deli turkey breast, hams, pork and duck bacon, and varieties of pastrami/corned/ Montreal style beef , I have yet to make a single person sick, so at least I seem to understand the science.

    Pretty good. Bison is incredibly lean, so it takes a little bit of work to get it to taste good. I rubbed them down with olive oil, then covered them with kosher salt. It was a very healthy meal, but it doesn't compare beef for flavor, especially when you venture away from grass-fed/organic beef into the regular stuff, which tastes so good.

    Ain't nothin boring about steak. We don't eat it all that often, so as to keep it a treat though. The missus also thinks too much red meat is bad for you but hey ho.

    The one time I had bison it had strips of smoked kangaroo. Both seemed to be giving the other what it lacked

    I think bison could really benefit from some tenderizing, whether it be with a mallet or with a tenderizer. Something needs to help break it down a bit.
