    Pan-fried panko salmon filet with sautéd sesame red kale and saffron couscous, and baked bone-in chili chicken breast with roasted potato and broccoli with old cheddar and crisp salami chips.
    It is now my duty to completely drain you.

    Now the barbecue season is on its way I thought I would share a side that you may enjoy with you meat/fish etc. Now I’m no cook (that’s cook) so I tend not to worry too much about measurements so this is enough for about 5 portions. It’s very simple and takes about 25mins.
    Ingredients:
    120 grams Basmati & wild rice

    I x small red onion
    1 tin of mixed bean salad 400 gram
    1 tin sweet corn 400 gram
    1 x lime
    Pack of fresh coriander

    Mixed spice ¼ teaspoon
    Cumin (powder) ¼ teaspoon
    Chilli powder (mild) ¼ teaspoon

    Salt and pepper.

    Rinse the rice and put in a saucepan of boiling water (I use 20 min rice).

    While it’s boiling rinse the mixed bean salad and the sweet corn put in large bowl, cut the pepper and onion into small bits and also loosely chop the coriander. Add some salt and pepper and give a good mix, check the rice and stir.

    . Put the spices in a small tub and add the juice from the lime and stir. About now the rice should be ready if it is put in a sieve and rinse with cold water and rest in the saucepan in cold water. For about 2 mins . Then add to the mixture and stir then add the spices. Obviously you can use a lemon if you like and more or less spices it depends on your preference.
