    It'll keep in the fridge for days. I do not know how many days it will last but I often do it the day before I want to use it. It's actually easier to use as the gluten loses some of it's spring. Just take it out of the fridge about an hour before you want to use it.

    I made a standard dry jerk rub and smoked chicken wings in it using the pimento wood. I could eat these non stop until they are either gone, or I keel over. Today was the former. Tomorrow???

    I did my aforementioned ribeye but it didn't come out too photogenic (or really anything special tastes wise). The wine on the other hand... It was amazing!!!!

    Had oysters (Salt Pond, I think), turtle soup, and Connecticut style lobster roll for my birthday dinner tonight. Excellent!
