Thanks. I'll have to try that out this week coming up. How long can you keep the dough before you need to cook it?

It'll keep in the fridge for days. I do not know how many days it will last but I often do it the day before I want to use it. It's actually easier to use as the gluten loses some of it's spring. Just take it out of the fridge about an hour before you want to use it.
